Bone Broth and Bone Health: Does It Help?
Does bone broth build bone or help osteoporosis? An honest, evidence-based UK look at its collagen, its calcium content, the lead question, and what actually protects bone.
Bone broth will not build bone or treat osteoporosis, and the evidence that it meaningfully strengthens the skeleton is weak to non-existent. It is a nourishing, warming food that can sit comfortably within a healthy diet — but it is not a bone treatment, and it is a poor and unreliable source of the one mineral most people associate it with: calcium. This guide sets out what bone broth actually contains, what the science does and doesn't show, and where your bones' nutrients are far better found.
Does bone broth build bone or treat osteoporosis?
There is no published clinical trial or cohort study measuring bone broth against bone mineral density or fracture risk — so any claim that it "builds bone" or "treats osteoporosis" is unsupported. This is an honest absence of evidence, not a proven negative: no one has run the trial. What we can say is that the strong claims made for bone broth in wellness marketing rest on the idea that dissolved bone minerals and collagen must rebuild your own bones, rather than on any measured outcome in people.
Osteoporosis is a medical condition. It is diagnosed and managed with proper assessment and, where needed, treatment — not with a food. Treat bone broth as one pleasant part of a balanced diet, and keep it in perspective.
What is actually in bone broth?
Bone broth is animal bones and connective tissue simmered in water, sometimes for many hours, which draws out gelatine and small amounts of minerals. When collagen-rich bone, skin and cartilage are heated in water, the collagen breaks down into gelatine — the substance that makes a good broth set to a wobble in the fridge. Broth also contains some protein, and small quantities of minerals such as calcium and magnesium leached from the bones.
The key word is small. How much of anything ends up in the pot depends heavily on the bones used, the animal, how long you cook, and whether you add something acidic. That variability is exactly why broth is an unreliable way to get any specific nutrient.
Is bone broth a good source of calcium?
No — the best available analysis shows broth delivers only trace amounts of calcium, far too little to count as a meaningful source. In the only published controlled study of metal extraction into broth, researchers reported that calcium and magnesium in home-made and commercial broths "were found not to exceed low tenths of milligram per serving" — under 5% of recommended daily levels.

Does adding vinegar or cooking the bones longer help?
It genuinely increases mineral extraction — but not enough to turn broth into a good calcium source. The same controlled analysis found that reducing the broth's pH (making it more acidic, which is the logic behind adding a splash of vinegar) increased calcium and magnesium extraction by factors of roughly 17 and 15. Cooking for more than eight hours also released more than shorter cooking times.
That sounds dramatic, but "many times more than very little" is still not very much — and the amounts varied widely between bone types and animal species. So the popular tips have a kernel of truth, yet the ceiling is low: even an acidified, long-simmered broth remains an inconsistent, minor mineral source rather than a reliable one.
What about the collagen in bone broth?
Bone broth does contain gelatine — collagen that has broken down during cooking — but broth is not a standardised or labelled dose of anything. That structural fact is not in dispute: simmering collagen-rich tissue yields gelatine. What broth cannot tell you is how much collagen you are getting or how it behaves in the body, because the quantity swings with the recipe and is never measured on the pot.

The takeaway here is narrower: enjoying broth for its collagen is reasonable as food, but it is not a measured supplement, and no effect on your bones should be assumed from it either way.
Should I worry about lead in bone broth?
For most people, no — but it's worth understanding where the concern came from. Because bones store lead absorbed over an animal's life, a small paper hypothesised that broth might carry it into the pot. That study measured higher lead in chicken bone broth (7.01 μg/L) and in skin-and-cartilage broth (9.5 μg/L) than in the tap water used to make it (0.89 μg/L).

The larger, more controlled analysis of essential and toxic metals in broth found that lead and cadmium were present at only a few micrograms per serving, with minimal associated risk. On balance, occasional bone broth within a varied diet is not something most people need to worry about.
So where should your bones' nutrients come from?
From a varied, balanced diet — not a single "superfood". The Royal Osteoporosis Society advises eating across the four main food groups and notes there are no specific foods that are bad for bones.

Bone broth is a wholesome, comforting food. Enjoy it for what it is. Just don't expect it to build your skeleton or fix osteoporosis: the calcium it delivers is a fraction of what you need, the collagen dose is unmeasurable, and no study has ever shown it improves bone density or prevents fractures.
